烹飪年菜三低一高 健康零負擔
星期日, 12月 21st, 2008過年腳步漸近，衛生署苗栗醫院爲增進民眾的健康，特別邀請元培科技大學鄭富貴教授(新竹市餐飲公會理事長)，為民眾烹飪示範健康年菜製作。
苗栗醫院院長李源芳表示，春節是國人傳統的大節日，家家戶戶都會準備豐盛的年菜，在美食當前的情況下，稍不留意，就可能對身體造成負擔，因此在過年前，舉辦了這場「2009三低一高健康年菜迎金牛」活動，幫助大家能盡情享受過年圍爐氣氛，又不怕吃出病來。
苗栗醫院營養師表示，過年期間的大魚大肉，對平日偏重肉類食物、高鹽、高脂肪的人，構成極大的健康隱憂，因此特別請鄭教授設計健康年菜食譜，將符合三低一高(低油、低鹽、低糖、高纖維)原則的食材和烹飪方式。
鄭教授示範的五道年菜包括：「年年有餘-水晶鱸魚捲」、「喜慶臨門-紅蟳八寶雜糧」、「恭禧發財-發財翡翠瑤柱」、「招財進寶-銀杏冬菇盒」和「大吉大利-抹茶椰漿晶凍」，每道皆依食材諧音，取了應景的吉祥菜名，食材內容則是具有取得容易、價格經濟、料理簡易快速等特色。
為符合「三低一高」原則，鄭教授表示，年菜烹調儘量以蒸煮方取替油炸，可減少油脂的攝取，食材選擇可多加些高纖蔬菜類的使用，不僅熱量低且富含水溶性纖維質，有助腸道黏膜健康的維護，鄭教授提出貼心的烹調小秘訣，例如魚片捲可多加些青菜、傳統的紅蟳八寶糕改用雜糧米取代糯米，以增加膳食纖維，主婦常用的芶芡烹調料理，要注意汁不要太濃稠，以筷子挑拉時，不出現絲狀為宜。
